San Marzano Roma tomato is the legendary heirloom paste variety from Italy, producing elongated, plum-shaped fruits typically 3-4 inches long and 1.5-2 inches wide, with thick, meaty walls, pointed ends, few seeds, and smooth, bright red skin that peels easily when ripe. The flesh is dense, low in water content, and intensely flavorful—rich, sweet with balanced mild acidity and deep tomato complexity that's widely regarded as the gold standard for sauce-making and cooking. These tomatoes are perfect for homemade marinara, pizza sauce, canned whole or diced tomatoes, roasted for concentrated flavor, added to soups and stews, or used in fresh salsa where you want authentic Italian taste without excess liquid. This variety is a worthwhile choice for Utah because it's indeterminate with a longer productive window that can extend harvests into fall in our shorter season when started early with transplants, it performs reliably in hot, dry summers with excellent drainage and full sun, and it's often recommended by local growers and USU Extension as a premium paste tomato for home gardeners who prioritize sauce quality and flavor.
