Snow Crown cauliflower is a hybrid variety known for producing large, uniform, pure white heads (curds) typically 7-9 inches across and weighing 2-3 pounds, with tight, smooth domes that are dense and attractive with minimal side shoots. The heads have a crisp, tender texture when harvested young, and the flavor is mild, sweet, and creamy—less bitter or cabbage-like than many cauliflowers, making it one of the most appealing for fresh eating or light cooking. It's excellent steamed or roasted to preserve its delicate sweetness, pureed into creamy soups or sauces, added to stir-fries and casseroles, served raw in crudités or salads for crunch, or used in gratins and cheese bakes for its classic white appearance and mild taste. This variety is a good choice for Utah because it's one of the earliest-maturing cauliflowers available, allowing reliable head formation in our short cool-season windows with spring or fall planting, it's relatively heat-tolerant for a cauliflower (less prone to buttoning or loose heads in warmer spells), and it's consistently recommended by USU Extension as a productive, high-quality option that performs well in fertile, well-drained soil under full sun when using transplants to get ahead of temperature swings.

Days to Maturity: Approximately 50-60 days from transplant (often 55 days typical for good heads; harvest promptly to avoid loosening).

Sun Needs: Full sun with at least 6-8 hours of direct sunlight daily—essential for tight head formation, white color (without blanching in some cases), and flavor in Utah's bright climate.

Season Type: Cool-season crop; best for early spring transplanting (late March to mid-April when soil is workable) or mid-summer for fall harvest—prefers consistent 50-70°F temperatures but handles mild heat better than many types; tolerates light frosts.

Plant Habit & Support: Compact plants 18-24 inches tall and wide; no support needed—space 18-24 inches apart in rows 24-36 inches apart for good airflow and head size.

Other Notes: Self-blanching in many conditions (leaves naturally curl over heads to protect from sun), reducing need for tying; watch for cabbage worms, aphids, clubroot, or tip burn (from calcium issues or uneven moisture)—organic mulch (like straw or compost) helps retain moisture and reduce soil splash; harvest when heads are firm and compact before they rice or open.

Best Planting Method: Transplant when soil is cool and workable in early spring or mid-summer for fall crops. Space plants 18-24 inches apart in rows or beds; plant at the same depth as in the pot. Amend soil generously with compost for fertility, drainage, and organic matter—raised beds are ideal in heavier or alkaline Utah soils to prevent rot and encourage healthy roots. Organic mulch (such as straw, compost, or grass clippings) around plants retains moisture, moderates soil temperature, and suppresses weeds.

Watering Needs: Maintain consistently moist soil (1-2 inches per week) without waterlogging—even moisture throughout growth prevents buttoning, loose heads, or bitterness; drip irrigation is best in dry Utah conditions to keep foliage dry and reduce disease. Mulch significantly helps during warmer spells; avoid letting soil dry out, especially during head formation, and containers (if used) dry faster so check frequently.

Fertilization Needs: Incorporate compost or balanced organic fertilizer at planting for nutrient-rich soil. Cauliflower is a heavy feeder—side-dress with a nitrogen-rich option (like compost tea or fish emulsion) 3-4 weeks after transplanting, and possibly again midway, to support leaf and head growth. Avoid excess nitrogen late to prevent soft, pest-prone plants; harvest when heads are firm and compact (before buds open) by cutting below the head with a sharp knife—leaves can protect during short-term storage for freshness. It's great for containers.
